From Field to Plate

We’re often asked how our meat is prepared and packed once the livestock leave the field. Eversfield Organic is unique because we have our own butchery and packaging facility here at the farm so everything is prepared to our own high standards and we can provide a bespoke service to our customers.

So here’s how it all happens.

Animal Welfare & Slaughter
It’s a fact that we cannot enjoy meat without an animal being slaughtered. Much has been written by food experts and celebrity chefs on the morality of meat yet our philosophy is simple: True quality meat can only come from happy, well cared for animals raised naturally.

We give our animals the best life they could hope for and whilst the process of slaughter is necessary, it’s carried out humanely and we know they’ve not suffered any stress during their lifetime. 

Our animals all live a happy organic life, they’re born on the farm and allowed to reach the ideal weight naturally without any forced feeding. Our Cattle are ready for slaughter at around 30 months, our lamb from 4 months old and our pigs from 6 months.

Our farm manager takes individual animals from the field when he feels they’re at their natural weight. Up until that day, none of the animals will have made any journey outside the farm, so when the inevitable day comes, we take care to ensure their one and only road journey is stress free and as short as possible. Our Farm Manager loads animals in pairs into a small livestock trailer which he tows carefully by 4WD to a nearby abbatoir, about one hour away. He then personally unloads the animals and takes them into the building where they’re immediately despatched in a humane manner. There’s no waiting around, and the animals are not stressed by the experience. This is important not only from the welfare point of view, but stress can also spoil the quality of the meat. 

Hanging our Meat
Meat carcasses are returned to Eversfield to hang in our own EU Licensed Meat Cutting facility here on the farm. The hanging room is maintained at a steady 4 degrees celcius and has capacity for up to 30 bodies of beef, pork or lamb. Our Organic Beef hangs for 21 days to mature the texture and flavour and our Organic Lamb is hung for 7 days.
 

Our Skilled Eversfield Butchers
Our professional butchers skillfully prepare joints, cuts, sausages, burgers and kebabs to order. We use 100% organic marinades, herbs and spices and our bacon is dry cured. All meat is prepared fresh.

Meat Packaging & Labelling – knowing where your food comes from
Our Organic Meat joints are vacuum sealed in clear plastic bags whilst smaller items are packed in trays and tightly covered with food wrap which is heat sealed. Each item is weighed, priced and a label is printed with all the information.

The label shows clearly what each item is so you can easily pick out what you need from your fridge or freezer, how much it weighs, the price, our organic certification reference and the trace code which shows where the meat came from. This code means that all our produce can be traced back to the original animal and we keep full records on how that animal lived during its lifetime.  

 

Packing & Delivering our Meat Boxes
Each meat order is prepared fresh on the day of despatch and clearly labelled. Our butchers start with a flat pack box which is folded square, then lined with specially made natural wool liners to insulate the box.
Ice packs are placed in the base, then each meat pack is carefully placed into the box. We make a careful note of exactly what has gone into each box along with the trace codes.   The wool liner is folded over the top then we add a posting bag and some customer information before the box is sealed up with tape.  The address label is stuck on the top and the customer invoice is attached inside a clear plastic sticker.  The box is then perfectly capable of keeping cool for up to 36 hours from the day it leaves us. We use a courrier service who collect from us daily between Monday and Thursday each week. Boxes are delivered to the customer the next day. We deliver to any mainland UK address.
 

Recycling our Boxes
The boxes can be recycled and we use natural wool liners for insulation which can be returned to us free for re-use. We send you a free posting bag with each box to send these back to us.

Can the meat be frozen?
Our organic meat is prepared fresh and being 100% organic it contains no preservatives. This means that it´s best enjoyed from fresh but can also be frozen. Once fully defrosted cook as normal.
